Wait, I lied… I left behind a whole lot of carbs that I don’t find pleasing. White bread, potatoes, a lot of pasta (despite my recent pasta post, I am picky about it and it HAS to be chewy or al dente), etc.
What carby did I discover recently that I DO like? Strangely enough, it’s lefse! I say strangely enough, because for those of you unfamiliar, lefse is made of potatoes, which I just threw under the bus two sentences ago.
“Lefse is a traditional soft, Norwegian flatbread. Lefse is made out of potato, milk or cream (or sometimes lard) and flour, and cooked on a griddle. Special tools are available for lefse baking, including long wooden turning sticks and special rolling pins with deep grooves.”

So why do I like it? Well, once heated, it takes on the most delicious, chewy, doughy but thin texture.

| Step 3: Wrap, Heat (microwave approximately 22 seconds) and Eat! |
Dee-lish.
Now, I know that people have “traditional” recipes for lefse which involve putting butter and sugar on it. Thankfully, I am not of Norwegian descent, or even close, and so I don’t have to explain why I don’t eat it in the traditional way. Instead, I’m free to use it like a denser and fattier tortilla, and slather it with salsa, peanut butter, or blue cheese at the flicker of my own whimsy.

Any Scandinavians out there who are shaking their heads in disgust, aghast at how I have tainted their beloved treat? I make no apologies. But I would still like to be friends.
