Well, the weekend sure has been a whirlwind of shopping. Two grocery trips, two trips to the library (different branches of course), and a tour of St. Paul vintage, retro, consignment, and boutique shops today!

We must have really been on the same wavelength today, as I owned exactly one pink top before today, and I bought it two weeks ago in California. Now I have two lovely pink sweaters. Thanks love!
Well, enough consumerism. I think it’s high time I show some pictures of the cookies I’ve been talking about for about 3 days now. It all started because I bought some pancake mix that I ended up not liking as microwave pancakes (one of my nightly snacks).
Round 1:
1/3 c pancake mix (mine was Quaker oatmeal pancake mix)
1/8 c pumpkin
few tbsp of water
splash vanilla
cinnamon
about half a bag of hacked up/pounded coconut m&ms
tbsp or maybe two of sunflower seeds

I don’t know what I baked these at – the oven was on after making a pizza so it was probably 375 or so, for about ten minutes. Delicious!
Round two:
pancake mix, pumpkin, water, cinnamon same
forgot vanilla, so added a few sugar in the raw packets at the end
2 hershey’s kisses for “frosting”- melted in microondas
cookie cutters (if you don’t have mini ones this will only make one large cookie)

I made these cookies one time since this batch, and am considering making some more when the superbowl is over. I like the softness/ chewiness of them (more like a bar) and the obvious bonus is how ridiculously easy they are (one bowl, some parchment, and a spoon, done!) And you can eat all of the dough you want, since nothing is uncooked (well, I suppose the unbaked pancake mix would make you a bit ill in mass quantities if we’re splitting hairs, but you get my point).
There you have it! A non-baker’s baking adventures. In Minnesota, we use any excuse to use the oven…
